My NPCs inventories are now full of misc. jewels and masterwork mauls that they're refusing to sell. I don't suppose anyone knows of a way to get rid of this crap? A saved game editor, by chance?

Another way is to backup your current Toee.exe and put back the version that was on the cd. You can remove and items the npcs didnt start with when you're in a shop that buy items (as opposed to shops that dont buy anything like the welcome wench barmaid). When you're done removing thier junk you just put back your exe.
