I'm a 3D modeler and I want to help
I can't promise anything yet but one of my near term goals is to write an animated model exporter for Blender. If / when that is accomplished, I think there would be much interest in modeling creatures from IWD and IWD2. I think dragons, yuan ti and illithids would be good starting points.
Is there anything I can work on?

Modeling yuan-ti or another monster.
You need models of objects, chests, itens, doors ...?
Not that I'm aware of. Maybe @Allyx needs something?
Also, can you do animations?
I do, I work mainly with 3DS MAX.
My knowledge is intermediary in all areas.
I found this site to be a good resource for finding the missing animations for the IWD bestiary, though there may be more not listed - especially for the boss characters.
New creatures I may require include:
Yuan-Ti, both male and female, maybe the legged variety, but certainly the serpent tailed variety, and a special 6 armed female version for Yxunomei.
Cyclops (reskinning an existing Giant may be sufficient)
Fire Giant (reskinning an existing Giant may be sufficient)
Frost Giant (reskinning an existing Giant may be sufficient)
Mummy (reskinning an existing Ghoul may be sufficient)
Neo Orog (reskinning an existing Gnoll may be sufficient)
Frost Salamander (reskinning an existing Salamander may be sufficient)
Ice Troll (reskinning an existing Troll may be sufficient)
Snow Troll (reskinning an existing Troll may be sufficient)
Shadowed Goblins (reskinning an existing Goblin may be sufficient)
Armored Skeleton (reskinning an existing Skeleton may be sufficient)
White Wyrm (though I could just use an Ice Lizard - wouldn't be the first time I've done that)
Winter Wolf (reskinning an existing Wolf may be sufficient)
Yeti (Half Knight made a White Ape which is close, if you want to make a better one, cool, if not I'll use HK's).
How do I get TOEE models?
Download the ToEEextract tool, un-rar it, then drag and drop the ToEE.dat files onto the exe file.
ToEE's root folder contains ToEE1.dat, ToEE2.dat, ToEE3.dat, and ToEE4.dat, and the modules folder contains ToEE.dat.
The artwork and models are in one of the first 4 .dat's.
I tried to use the 3DS Max ToEEImpExp plugin but it did not work. I use windows 10 64x 3DS Max 2016 64x.

You could try playing with the SKM converter in this thread.
I installed 3ds max 2010 32x and it worked
Hmm I guess you could scratch the dragon, found a nice one here:
